Peanut Butter Balls

Again on this one, WARNING: Your ass will grow if you consume the following recipe (but your husband will love them so much he won't care!)  (: 

Ingredients:

2 Cups Peanut Butter
1/2 Cup Butter(1 stick) has to be butter, not margarine or Imperial
3 Cups Rice Krispie Cereal
4 Cups Confectioners Sugar
1-2 bags of flavored chips (chocolate, butterscotch, etc.)

Melt Peanut Butter and Butter in a sauce pan over low heat.  In a  large bowl or mixer, combine Rice Krispie Cereal and Confectioners Sugar until blended.  Pour Peanut Butter and Butter over Rice Krispie Mixture and (this is where I recommend having a Kitchen Aid or stand mixer) blend thoroughly. Note: this is an arm workout if you don't have a stand mixer.....the first time I used my Kitchen Aide to make peanut butter balls this year, I was literally thanking God for giving some genius the idea to invent this wonderful contraption!  I made these yummy things 4 times this holiday season verses my usual once or twice(max)!  So, after blending thoroughly, line two cookie sheets with wax paper (this makes for prettier balls when it is time to remove them from the pan).  Then form a million 1" balls and refrigerate them on the covered cookie sheets till firm (a couple hours or overnight). Next you melt the chips of your choice (our favorite are butterscotch) in a double boiler.  With a spoon dip and cover the balls and place them back on the lined cookie sheet in the refrigerator for an hour.  They are so yummy you may not want to share.......and my husband definitely does not do well sharing these.  I usually have to stash some to give away in the back forty of our fridge hoping he doesn't spot them!  Makes me kinda happy though, knowing he loves my cooking that much. ;o)

In hindsight, that arm workout mentioned above is probably a good thing depending on how many of these you plan to eat!                


Roll Peanut Butter, Butter, Powdered Sugar, & Rice Krispie mixture into 1" balls
Melt chocolate covering of your choice in a double boiler. I have found that Nestle brand chips don't melt well for this.  So I use guittard brand (found at Winco) and it doesn't dry out while melting.

With a spoon dip and cover balls with butterscotch, chocolate, or white chocolate.
